Ingredients: For Filling: 2 tbsp oil Salt 1 onion (chopped) 1.5 cups mixed vegetables (finely chopped) 1 tsp red chilli powder 1 tsp coriander powder 1/4 tsp amchur powder (raw mango powder) Coriander leaves (chopped) For Dal layer: 3/4 cup yellow moong dal (soaked overnight) 2 green chillies 1 ginger Salt Ingredients: For Filling: 2 tbsp oil Salt 1 onion (chopped) 1.5 cups mixed vegetables (finely chopped) 1 tsp red chilli powder 1 tsp coriander powder 1/4 tsp amchur powder (raw mango powder) Coriander leaves (chopped) For Dal layer: 3/4 cup yellow moong dal (soaked overnight) 2 green chillies 1 ginger Salt Method: - Soak moong dal overnight and grind it with green chillies, ginger, salt - Put oil in a pan and to the heated pan add salt - Add the chopped onions and saute it till its soft - Add the vegetables, mix them well and let them cook for 5 - 7 mins with the lid of the pan on. - Once the vegetables are cooked add red chilli powder, coriander powder, amchur powder and cook it by mashing the vegetables a bit - Remove the vegetable filling in a plate and let it cool, add salt if needed - Brush some oil in a pan and put a spoonful of dal mixture - Take a roti and press down till the dal mixture spreads to the edges - Brush some oil on top of the roti (optional) and sprinkle some on the sides - Once the roti is done take it off the pan and keep it aside - Apply sweet chutney and green chutney and spread it all over the roti - Put the vegetable filling in the roti and roll it - Cut it into two halves and serve it with raita and kachumber.
